Charry Crostini with Fresh Mozzarella, Prosciutto, Fig Jam and Rocket Recipe
INGREDIENTS
1 loaf sourdough baguette or Turkish bread
Olive oil, to grill bread and drizzle
Salt flakes
1 jar Maggie Beer Burnt Fig Jam
150g thinly sliced prosciutto
2 x 125g balls fresh buffalo mozzarella (or regular mozzarella)
Small bag baby leaf rocket
METHOD
1. Slice baguette into 1cm pieces, generously drizzle with olive oil, sprinkle with salt flakes and grill over a hot griddle pan or barbecue until charry.
2. Top with jam, rocket, mozzarella, and prosciutto.
3. Drizzle with extra virgin olive oil and sprinkle with a touch more salt flakes.
